When tortellini is cooked al dente, strain the water and then rinse with cool water for a few seconds to cool it slightly. Add the tortellini to a medium to large bowl. Add in the spinach, tomatoes, mozzarella, basil and garlic., Slice the mozzarella cheese and the fresh tomato. Slices that are about 1/4 inch work well. Spread the pesto on one slice and add the spinach, tomatoes, and cheese. Drizzle on some balsamic glaze. Put the other piece of bread on top. (Optional) add a little olive oil to the bread. Grill on medium heat for 3-5 minutes.
